Zippy Devilled Eggs

Ingredients
12 hard-boiled eggs, peeled
1/3 cup light mayonnaise or salad dressing
3 tbsp chili sauce
1 tsp Dijon-style mustard
¼ tsp hot pepper sauce
Snipped chives or paprika

Method
Slice eggs in half lengthwise; remove yolks and set whites aside. Mash yolks in a small bowl. Stir in the mayonnaise, chili sauce, mustard and hot pepper sauce. Pipe or stuff egg yolk mixture into egg whites. Sprinkle with chives or paprika. Refrigerate until serving.

Pizza Omelette

Ingredients
2 eggs
2 tbsp water 30
Salt and pepper, to taste
Cooking spray
3 tbsp pizza sauce
5 slices salami
¼ cup shredded Mozzarella cheese
1 tbsp grated Parmesan cheese

Method
Beat eggs with water; season with salt and pepper. Spray an 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium-high heat.
Pour in egg mixture. As mixture sets at the edges, with spatula, gently push cooked portions towards center. When eggs are almost set on surface but still look moist, spread pizza sauce over half of the omelette.
Top with pepperoni and Mozzarella cheese. Fold the omelette in half and slide onto a warm plate. Sprinkle with Parmesan cheese.
Tip
The omelette pan is hot enough when a drop of water will roll around instead of bursting into steam immediately.
